Fun fact about asparagus! It takes 3 years before you actually have asparagus you can it. Talk about delayed gratification! So when we moved you better believe the asparagus came with us. Asparagus season is the first sign that warm weather is here to stay for me.
I was inspired to create this quick baked pasta recipe by the infamous baked feta tiktok pasta and the fresh summer vegetable that make where I live come to life each year; asparagus included.



The baked feta pasta was delicious but I wanted to add more veggies and a happy accident of not having feta cheese led to swapping it for goat’s cheese.
This recipe is super easy to make in bigger batches for guests or as a quick weeknight meal and also stores well for leftovers.
How to Make Summer Vegetable Baked Pasta Recipe
Like all S & S recipes, simple and easy is the name of the game here. This recipe is no different!! It’s easy to make and modify to your preferences.

For this baked pasta recipe, you’ll need:
- a large baking dish
- goats cheese
- cherry tomatoes
- zucchini
- asparagus
- garlic
- olive oil
- salt & pepper, to taste



Instruction to Make This Recipe
Before you start cooking, decide on what summer vegetables you want to use. The ingredient list is my favourites but I also use this recipe as a good opportunity to clean out the fridge and will throw in other veggies.
Preheat the oven to 400 degrees. Next, dice the vegetables you are using into bite size. Crush your cloves of garlic.
TIP: Garlic is so good for your immune system. If you can, crush your garlic and let it sit – it has amazing benefits.
Load your diced veggies and garlic into a baking dish. Add your goat’s cheese. Next, drizzle with olive oil & season with salt and pepper to taste
Bake for 25 minutes, uncovered. While the veggies are baking, boil pasta in salted water.
Combine pasta and veggies in baking dish. Adjust salt and pepper or add other spices like basil or chilli flakes.



Summer Vegetable Baked Pasta Recipe

- Large Casserole Dish
- 150g Goat's Cheese
- 1 cup Cherry Tomatoes
- 1 Zucchini, diced
- 1 Bunch Asparagus, chopped
- Garlic, crushed
- 1 tbsp Olive Oil
- Salt & Pepper, to taste
Instructions
1. Preheat oven to 400 degrees
2.Dice veggies and crush garlic
3. Add goats cheese (I used 150g) and diced veggies & garlic to baking dish
4. Drizzle with olive oil & season with salt and pepper to taste
5. Bake for 25 minutes, uncovered
6. Boil pasta while veggies are baking
7. Combine pasta and veggies in baking dish
8. Adjust salt and pepper or add other spices like basil or chilli flakes
